Oatmeal Cookies

Oatmeal Cookies

Ingredients:

2 2/3 C. unsalted Olivino margarine

2 C. Packed brown sugar

3 Large Omega 3 eggs

3 TBS. Honey

1 TBS. Best quality vanilla

1 1/2 tsp. Sea salt

3 Pounds (8 cups) old fashioned rolled oats

4 C. unbleached all-purpose flour

8 oz. Chocolate chips

8 oz. Coarsely chopped walnuts (optional)

Instructions:

Preheat oven to 350°. Line baking sheets with parchment paper. (Or spray with nonstick spray)

Cream the margarine and sugar together in a large bowl until smooth. Beat in the eggs, honey, vanilla, and sea salt until smooth and creamy. Use a large wooden spatula or your clean hands (best plan!) to work in the flour and oats until well combined. Add chocolate and walnuts if desired and mix until evenly distributed. Shape the dough into large three-inch balls and press into five– or six– inch flat cookies on baking sheets. Bake for 15 minutes or until as brown as you desire. Cool on wire racks. Make the cookies smaller if you like! Makes 24 very large and very delicious cookies.

 

This recipe is Karla’s favorite cookie! I got the recipe from "The Eat-Clean Diet" book, by Tosca Reno. I made one small change in the original recipe. Tosca used raisins instead of chocolate chips. I love chocolate chips in my cookies!
