Texas Caviar

1 C. Finely chopped red onion
1 C. Finely chopped red pepper
1 C. Finely chopped green pepper
1 C. Chopped celery
1 Can Black beans rinsed and drained
1 Can White corn rinsed and drained
1 Can or 1 bag frozen blackeyed peas
    If frozen, thaw. Can- rinse and drain
Mix all the above ingredients in large bowl.
 
Dressing:
3/4 C. Canola oil
1/2 C. Apple cider vinegar
1/2 C. Sugar
1/2 tsp. salt
1/4 tsp. pepper
 
In a small sauce pan mix and boil until sugar dissolves about 2 minutes.
 
Pour over bean mixture. Stir and soak for 24 hours. Stir about every 5 hours or so. Before serving drain off about 1/2 c. liquid. Serve with chips or crackers.
