Gluten Free Chocolate Chip Cupcakes

1 ¾ C. Oatmeal

3 Egg Whites

¾ C. Unsweetened Cocoa

½ C. Unsweetened Applesauce

1 tsp. Vanilla

½ C. Plain Greek Yogurt or Mayonnaise (I use Mayo)

½ tsp. Cream of tarter

1 ½ tsp. baking Powder

1 ½ tsp. baking Soda

¼ tsp. salt

1 C. hot  water

1 C. Sugar

½ Chocolate chips (added later)

Blend all ingredients in food processor until smooth. (Except Choc. Chips- you add those after mixing)  Put batter in bowl, mix in ½ C. Chocolate Chips.

Put in 24- lined muffin tins, about half to two-thirds full. Bake at 350° for 10 minutes. Take tins out, sprinkle a few chocolate chips on each cup cake and bake for another 2-6 minutes, until toothpick comes out clean.
