Banana Bread

3 Bananas
1/2 C. Butter or Margarine
2 Eggs
2 C. Flour
1 tsp. Baking Soda
1 C. Sugar
1/4 C. Chopped Walnuts
 
Grease and flour loaf pans. Mash bananas. Cut butter or margarine into small pieces. In large bowl, mash bananas, margarine, eggs, flour, baking soda, and sugar. Add walnuts, mix well. Pour inot pan. Bake 45 minutes, or until done, at 350 degrees. Cool. Enjoy!

Pineapple Nut Bread
 
3/4 C. Brown Sugar, packed
3 T. Soft Margarine
2 Eggs
2 C. FLour
2 tsp. Baking Powder
1/2 tsp. Salt
1/4 tsp. Baking Soda
1 (8 oz) can Crushed Pineapple
3/4 C. chopped Nuts
2 T. Sugar
1/2 tsp. Cinnamon
 
Grease Loaf pan. Put brown sugar, margarine, and eggs into large bowl, mix until fluffy. In another bowl mix flour, baking powderm salt, and baking soda. Stir half into fluffy mixture, Mix in pineapple and juice. Add rest of flour mixture and stir. Add nuts. Pour into pan. Mix sugar and cinnamon. Sprinkle over top. Bake 45-50 minutes at 350 degrees. Cool
 
 
 
Pumpkin Bread
 
1/2 C. Shortening
1 1/3 C. Sugar
2 Eggs
1 C. Canned pumpkin
1/3 C. Water
1 2/3 C. Flour
1 tsp. Baking Soda
3/4 tsp. Salt
1/4 tsp. Baking Powder
1/2 tsp. Cinnamon
1/2 tsp. Cloves
1.2 C. Chopped Nuts
1/3 C. Raisins (Optional)
 
Grease loaf pan. Mix shortening and sugar in large bowl. Stir in eggs, pumpkin, and water. In another bowl mix flour, baking soda, salt, baking powder, cinnamon, and cloves. Add to pumpkin mixture. Stir. Add nuts and raisins, stir. Pour into bread pan. Bake 70 minutes at 350.
 
 
 
 

Chocolate Zucchini Bread

3 Eggs

1 C. Vegetable oil

1 1/2 C. Sugar

2 tsp. Vanilla

2 C. Shredded Zucchini, Drained

2 C. Flour

2 tsp. Baking soda

1/4 Baking Powder

1 tsp. Salt

3 tsp. Cinnamon

3 Heaping TBS. Of Cocoa

1 C. Chocolate Chips

1 C. Walnuts

Beat eggs in large bowl. Stir in oil, sugar, zucchini, and vanilla. In another bowl, mix the dry ingredients and add to the egg mixture. Blend well. Stir in Chocolate chips and nuts. Pour batter into two 8x5 loaf pans, (well greased with non stick spray). Bake 375° for 1 hour. Cool in pan 10 minutes before removing.
