Chop-Suey Cake

Chop-Suey Cake

2 C. Flour

1 C. Sugar

2 Eggs

2 tsp. soda

1 Can (20 oz) Crushed Pineapple, undrained

1 C. Walnuts

½ C. Coconut

Combine flour, sugar, eggs, soda, pineapple and juice, walnuts, and coconut. Do not use mixer, just stir. Bake in 9x13 pan for 30 or 40 minutes at 350° or until brown and puffed on top. Cool.

 

Frosting:

1    8 oz. pkg. Cream Cheese

½ C. Oleo or butter, (1 stick) softened

2 C. Confectioner Sugar

2 Tbsp. Milk

1 tsp. Vanilla

Mix cheese and oleo until color is uniform. Gradually add the confectioner sugar and milk until smooth. You may need to add a little more sugar to make it just right to spread. Add vanilla. Spread on the cake while the cake is still a little warm. Cool and refrigerate until used, and refrigerate leftover cake. Enjoy!
