Oven Roasted Vegtables

 
Oven Roasted Veggies
 
1 med. zucchini, cut into bite -size pieces
1 med. summer squash, cut into bite-size pieces
1 med. red bell pepper, cut into bite-size pieces
1 med. yellow bell pepper, cut into bite-size pieces
1 pound fresh asparagus, cut into bite-size pieces
1 red onion, cut into small bite-size pieces
3 Tablespoons extra-virgin olive oil
1 teaspoon Salt
1/2 tsp. Fresh ground black pepper
 
Heat oven to 450. Place the zucchini, squash, peppers, asparagus, and onion in large roasting pan. Toss with olive oil, salt, and pepper to mix and coat. Spread in single layer in pan. Roast for 30 minutes, stirring occasionally, until the veggies are lightly browned and tender.
