White Chicken Chili
1 lb chicken breast, cut up into 1/2 inch cubes 1 med. onion 1 1/2 tsp garlic powder 1 tbsp veggie oil 2
cans (15 1/2 oz) Great Northern Beans, rinsed and drained 1 can (14 1/2 oz) chicken broth (David likes it 'soupy' so I
make my own chicken broth and use all 16 oz) 2 cans (4 oz) chopped green chilies (I use just one can) 1 tsp each salt,
cumin, oregano 1/2 tsp pepper 1/4 tsp cayenne pepper 1/2 cup whipping cream (I use all of an 1/2 pint container) 1
cup sour cream
In a large saucepan, saute chicken, onion and garlic powder in the veggie oil until chicken is no longer
pink. Add beans, broth, chilies and seasonings. Bring to boil. Reduce heat and simmer, uncovered for 30 minutes. Remove from
heat, stir in whipping and sour cream. Serve immediately!
**I make this without the whipping cream and sourcream,
and use extra low sodium chicken broth. Then it is a clean eating recipe.
