1 1/2 C. Melted Crisco
1 C. Brown Sugar
1 C. White Sugar
2 Eggs
4 1/4 C. Flour
2 tsp. Baking Soda
2 tsp. Baking Powder
1 tsp. Salt
1 tsp. Cinnamon
1 C. Chopped Pecans
Combine Crisco, brown sugar, white sugar, and eggs. Mix well. Add dry ingredients and mix well. Add pecans.
Mix and form into two rolls, then wrap each in wax paper. Refrigerate 3 to 4 hours or overnight. Slice dough in 1/4 inch slices
and place on cookie sheet. Bake at 375-400 for 10 to 12 minutes.
Amish Sugar Cookies
1 C. White Sugar
1 C. Powder Sugar
1 C. Oleo
1 C. Veg. Oil
2 Eggs
1 tsp. Baking soda
1 tsp. Cream of tarter
1 tsp. Salt
1 tsp. Vanilla
4 1/2 C. Flour
Additional sugar rolling. Combine sugar, oleo, oil, and eggs. Beat well. Add remaining ingredients.
Mix well. Refrigerate until chilled. Roll in balls and dip in sugar. Place on cookie sheet. Flatten with bottom of glass dipped
in sugar.
Bake 350 for 10-15 minutes.
Peanut Butter Cookies
(My brother Tim's and Rusty's favorite!)
1/2 C. Sugar
1/2 C. Brown Sugar
1/2 C. Shortening
1/2 C. Peanut butter
1 Egg
1 1/4 C. All- purpose Flour (Can also use whole wheat flour)
3/4 tsp. Baking soda
1/2 tsp. Baking powder
1/4 tsp. Salt
Heat oven to 375. Mix sugars, shortenings, peanut butter, and egg. Stir in flour baking soda, baking powder,
and salt. Shape dough into 3/4 -1 inch balls. Place 2" apart on cookie sheet. Flatten in crisscross patterns with fork
dipped in flour (or water). Bake until set but not hard. 10 minutes.
No Bake Cookies
Mix in sauce pan on stove--
2 C. Sugar
1/2 C. Cocoa
1/2 C. Milk
1/4 C. Butter (or Margarine)
Stir. Boil 1 minute. Add:
1/2 c. peanut butter
1 tsp. vanilla
3 C. Oatmeal.
Mix Well. Place teaspoon to tablespoon size dough on tin foil to cool and set.
Pumpkin Cookies
(Karla's Favorite cookies)
1 C. Sugar
1 C. Canned Pumpkin
1/2 C. Shortening
1 Tablespoon grated orange peel
2 C. All Purpose flour
1 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Cinnamon
1/4 tsp. Salt
1/2 C. raisins (Optional)
1/2 C. chopped walnuts
Heat oven to 375. Mix sugar, pumpkin, shortening, and orange peel. Stir in flour, baking powder, baking
soda, cinnamon, and salt. Stir in raisins and nuts.
Drop dough by teaspoons onto ungreased cookie sheet. Bake until light brown, 8 to 10 minutes. Immediately
remove from cookie sheet, cool.
